| Today I tried something new! Instead of the kids regular french toast, I added some of our INTERNATIONAL DELIGHT Pumpkin Pie spice (coffee creamer). Wow! Did it make a difference!!! |
2 eggs, beaten
1/4 cup of skim milk
1 tsp cinnamon
1 tsp vanilla
3 TB International Delight (any flavor) We used Pumpkin Pie Spice
Sprouted Grain Bread, about 6-8 slices, thawed *found in the freezer section at SOME stores*
Rainbow Sprinkles, optional
Butter or Smart Balance Spread
Light Pancake Syrup, optional
Beat first 5 ingredients together.
Butter a a heated skillet to avoid sticking.
Dip "SPROUTED GRAIN BREAD" (we used Trader Joe's, you could also use Ezekiel) into the Milk and Egg mixture.
{This bread is flourless and packed with protein. The kids don't like it for sandwhiches but they have NO CLUE when I use it for French Toast! ;-D }
After dipping bread both sides into the milk mixture, put into the butter skillet. Depending on skillet size, you can put 2-3 pieces of toast in there at a time. Cook til browned on each side, flipping once.
Butter the hot french toast after taking off the skillet, and then sprinkle with rainbow sprinkles. Serve with a side of dipping syrup.
YUM!!! This had such an "essence" of Fall with its Pumpkin Pie flavoring in it! I'd love to try other flavors made my International Delight! The best part is that using this sprouted grain bread, I feel like the kids are still getting a healthy protein-filled breakfast! My 3 year old had 2 1/2 slices!
